Healthy blueberry vegan pie with crumb topping

Ingredients:

-1 cup flour

-1 cup oats

-2 tbsp salt

-3tbsp water (or maybe a bit more if you see it needs it)

-3/4 cup of coconut oil

-1/2 cup coconut sugar

 

Filling:

-2 cups blueberries

-2tbsp cinnamon

-Vanilla extract

-1/4 cup coconut sugar

Nuts (optional)

 

Topping

-Same mix than the crust

Preparation

Preheat the oven. For the crust, combine the coconut oil, the flour+oats, salt, and once it’s well mixed add the flour, keep mixing with the water. Refrigerate for 20 minutes in the fridge.

Knead by hand and spread the dough over the baking tray of preference.

For the filling, in a large bowl combine the blueberries with the cinnamon, vanilla extract, and sugar. Pour it into the crust.

Bake for 30 minutes (165º), then add the crumble and bake it for 10-15 minutes more.

Decorate with mint once it’s cold.
